the Pecorino planted in the 1970s and the Chard going back to the 1920s (an old clone now found nowhere else)

At the end of harvest the same method for 8 days and then blended together and aged in enameled steel

The historic vines are pergola trained and pruned with the Cazenave-Marcon method

2019 Domaine Amelie & Charles Sparr Pinot Noir 'Jardin d'Eden', Alsace, France Cellario Tasting NotesAn outstanding, limited Pinot Noir, from an exceptional limestone plot in Sigolsheim that sits just next to the grand cru Mambourg. Charles recently planted Pinot here, using grafts from the Clos des Epeneaux vineyard in Burgundy. He planted densely one vine per every meter and he plows by horse. In 2019, the wine was made with 100% whole clusters. Hand harvested, fermented with native yeasts and aged for 12 months in oak barrels.
